Columbian Chicken Stew

Notes

  • Have all ingredients prepped and cans open before you brown the meat.
  • Peel skin off chicken before browning. Make sure to use chicken thighs and not other cuts of chicken.
  • To avoid burning, brown meat on medium saute function.

Ingredients

  • 4 chicken thighs (bone in, skin on)
  • 2 large onions
  • 1 head garlic
  • 1 large russet potato
  • 5 carrots
  • 1/2 cup frozen peas
  • 1 can fire roasted canned tomatoes (14 oz)
  • 1 can cannellini beans or white kidney beans (14 oz)
  • 2 bay leaves
  • 1 goya sazon seasoning pack with azafran
  • 1 salt

Step-By-Step Directions

  1. Put bay leaves, sazon packet, vegetable oil, and salt next to stove
  2. Open both cans, do not drain any liquid, put next to stove
  3. Measure out frozen peas and put next to stove
  4. Cut onion into 1-inch chunks, put next to stove
  5. Mince garlic, put next to stove
  6. Peel carrots then cut into 1-inch chunks, put next to stove
  7. Peel potato then cut into 1-inch chunks, put next to stove
  8. Take out chicken thighs and cut off skin and excess fat, put next to stove
  9. Take out Instant Pot and set saute function to medium heat. Grab long tongs and wooden spoon while warming up
  10. Drizzle some vegetable oil to coat the bottom of the pot and brown meat for 3 min on each side. Take out a clean plate for them while they are browning
  11. Remove browned chicken thighs to clean plate
  12. Drizzle vegetable oil to coat bottom of the pot and add onion and garlic to sauté for 1-2 minutes.
  13. Add can of tomatoes and use a wooden spoon to deglaze the pot/scrape the stuff off the bottom
  14. Add remaining ingredients and stir well
  15. Add back chicken and lightly mix
  16. Cancel saute function on Instant Pot by pressing red button. Put top on Instant Pot and press manual button, adjust pressure to high, and set timer for 20 minutes.
  17. Trust the Instant Pot. It will take more time than you think for it to do it’s thing. Trust the Instant Pot.
  18. Clean up while waiting
  19. Package up any leftover ingredients while waiting
  20. Once 20 min timer is up, use towel to cover knob and release steam (try to get away from cabinets if possible).
  21. Once all steam is released, remove lid and wash it along with the gasket while waiting for food to cool
  22. Take out a clean plate and remove chicken from pot, then shred back into pot
  23. Dish out portions for this meal, then put rest into tall clear plastic cylinders for storage
  24. Clean pot, then eat
