- Taking care of fresh basil
- If preparing all at once at night, start boiling water for pasta first. Then cook pasta as your preparing the sauce.
- Save 1/4 cup pasta water and drain the rest.
- 1 pot for cooking pasta, 1 big pan for preparing sauce.
- If you want extra sauce, get an additional small can of tomato sauce to go along with your big can of whole peeled tomatoes.
Ingredients
- 1 can of whole peeled tomatoes (28 oz, Hunts)
- 1 can of tomato sauce (14 oz, Optional)
- 1 box of angel hair pasta (1 lb)
- 1 head of garlic (bigger the better)
- 1/2 cup fresh basil
- 1/2 cup olive oil
- 1/4 cup of saved pasta water
Step-By-Step Directions
- Wash and dry fresh basil
- Olive oil in pan, slowly heat up at medium low
- Slice the garlic, then salt it
- Put garlic in hot pan and let cook until infused (3-5 minutes)
- Remove pan from heat and let cool
- While cooling, julienne fresh basil (stack leaves, roll, then slice once)
- Add fresh basil to garlic oil and let infuse
- If preparing ahead of timeĀ this is where you stop and let oil infuse
- Start boiling water then cook pasta when its boiling (if you haven’t already). Save 1/4 cup pasta water and drain the rest.
- Heat up garlic/basil oil on medium heat
- Open can of tomatoes and dice (cut in half, then slice in half one more time, then 3 cuts)
- Save liquid from can, and if using extra can of just sauce, open that and put it in big can
- Put tomatoes in pan with oil, spread them out and salt them
- Add remaining sauce and salt it
- Mix and heat up until warm
- Take 1/2 the sauce out and put into small mixing bowl with lid
- Toss pasta with the pasta water and the other 1/2 of the sauce left in the pan
